Roasted Garlic Chicken
A whole chicken roasted until golden with garlic-thyme butter beneath the skin and lemon in the cavity.
Instructions

Step 1
Heat the oven to 220°C. Pat the chicken dry, place it breast-side up on a rack in the roasting pan, and tuck the wing tips beneath the body.

Combine the garlic, softened butter, thyme, salt, and black pepper to make a uniform paste.

Gently loosen the skin over the breasts and thighs. Spread most of the garlic butter beneath the skin and the remainder over the outside, then rub the skin with olive oil and place the lemon halves in the cavity.

Roast the chicken at 220°C until the skin begins to turn golden.

Step 5
Reduce the oven to 190°C and continue roasting until the thickest part of the breast and the innermost thigh both reach at least 74°C.

Transfer the chicken to a clean cutting board and rest it for 15 minutes before removing the lemon and carving.
