Ratatouille with Provolone
A hearty French vegetable stew of eggplant, zucchini, peppers, and tomatoes, finished in the oven beneath a melted provolone topping.
Instructions

Step 1
Preheat the oven to 200°C. Coat the inside of the baking dish with 1 tsp (5 ml) of the olive oil.

Heat the remaining 2 ¾ tbsp (40 ml) olive oil in the Dutch oven over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until beginning to soften.

Add the eggplant, zucchini, and salt. Cook over medium heat, stirring occasionally, until the vegetables begin to soften and the eggplant loses its raw appearance.

Add the garlic, tomato paste, thyme, and ground black pepper. Cook over medium heat, stirring continuously, until fragrant.

Stir in the tomatoes and their juices. Bring to a gentle simmer, then cook over low heat until the vegetables are tender and the sauce has thickened slightly.

Remove the pot from the heat and stir in the basil and red wine vinegar. Transfer the ratatouille to the prepared baking dish and spread it evenly.

Scatter the provolone evenly over the ratatouille. Bake at 200°C until the cheese is fully melted and the sauce is bubbling around the edges.
