Raspberry Coconut Popsicles

Creamy coconut popsicles blended with tart raspberries, maple syrup, lime, and vanilla.

Instructions

  1. Step 1

    If using fresh raspberries, rinse them under cool running water and drain thoroughly. Thaw frozen raspberries before proceeding.

  2. Step 2

    Place the raspberries, coconut milk, maple syrup, lime juice, vanilla extract, and salt in the blender. Blend until completely smooth.

    Timer: 1 min (fixed)

    Ingredients used: 400.0 ml Coconut Milk, 0.5 gr Fine Salt, 15.0 ml Lime Juice, 60.0 ml Maple Syrup, 250.0 gr Raspberry, 5.0 ml Vanilla Extract

  3. Step 3

    Divide the blended mixture among eight popsicle cavities, leaving a little space at the top. Scrape down the blender as needed and tap the mold gently to release air pockets.

  4. Step 4

    Insert the sticks and freeze the popsicles until completely firm.

    Timer: 360 min (fixed)

  5. Step 5

    Run warm water briefly over the outside of each cavity, then gently pull out the popsicles and serve.
