Quinoa Kısır
A Turkish-style quinoa salad with fresh vegetables, herbs, walnuts, red pepper paste, lemon, and warm spices.
Instructions

Step 1
Place the quinoa in a fine-mesh sieve and rinse thoroughly under cold running water, rubbing the grains gently until the water runs clear. Drain well.

Transfer the rinsed quinoa to a saucepan and add the water. Bring to a boil over high heat, then cover and cook over low heat until the water is absorbed and the grains are tender.

Remove the covered saucepan from the heat and let the quinoa stand undisturbed.

Fluff the quinoa with a fork, transfer it to a large mixing bowl, and spread it out loosely. Let it cool until it is no longer steaming.

Whisk the red pepper paste, lemon juice, olive oil, garlic, salt, black pepper, red pepper flakes, and cumin in a small bowl until evenly blended.

Wash and dry the cucumber and tomato, then dice them finely.

Wash and dry the parsley, green onions, and lettuce. Finely chop the parsley, thinly slice the green onions, and shred the lettuce.

Pour the dressing over the cooled quinoa and fold until evenly coated. Add the cucumber, tomato, parsley, green onions, lettuce, and walnuts, then fold gently until evenly distributed.

Serve at room temperature, or cover and refrigerate until chilled.
