Fasulye Pilaki
Turkish-style white beans gently braised with olive oil, onion, carrots, potatoes, tomatoes, and garlic, then finished with lemon and parsley. Serve at room temperature or chilled.
Instructions

Step 1
Place the beans in a large bowl, add 1,500 ml water, and soak for 8 hours or overnight.

Drain the soaked beans and transfer them to a large saucepan. Add 1,000 ml fresh water, bring to a full boil over high heat, and boil uncovered.

Reduce to low heat, cover partially, and simmer until the beans are nearly tender but still hold their shape.

Drain the beans in a colander and set them aside.

Dry the saucepan, add the olive oil, onion, and carrot, and cook over medium heat until the onion softens.

Add the garlic and tomato paste and stir over medium heat until fragrant.

Add the potato, tomato, sugar, salt, bay leaves, and the remaining 2 cup (500 ml) water. Bring to a boil over high heat.

Reduce to low heat, cover, and simmer until the potato begins to soften.

Fold in the cooked beans. Cover and simmer over low heat until the beans and vegetables are tender and the sauce is slightly thickened.

Remove the saucepan from the heat, discard the bay leaves, and let the pilaki cool uncovered.

Stir in the lemon juice and parsley. Serve at room temperature, or cover and chill before serving.
