Pumpkin Seed Nut Clusters

Crunchy baked clusters of pumpkin seeds, almonds, and pecans bound with maple syrup and warmly seasoned with cinnamon and vanilla.

Instructions

  1. Step 1

    Preheat the oven to 160°C. Line a rimmed baking sheet with parchment paper.

  2. Step 2

    Combine the pumpkin seeds, almonds, pecans, ground cinnamon, and salt in a large mixing bowl.

    Ingredients used: 70.0 gr Almond, 1.0 gr Fine Salt, 2.5 gr Ground Cinnamon, 55.0 gr Pecan, 120.0 gr Pumpkin Seed

    Cookware: mixing bowl, spatula

  3. Step 3

    Add the maple syrup, coconut oil, and vanilla extract. Stir until the seeds and nuts are evenly coated.

    Ingredients used: 15.0 ml Coconut Oil, 60.0 ml Maple Syrup, 5.0 ml Vanilla Extract

    Cookware: mixing bowl, spatula

  4. Step 4

    Transfer the mixture to the prepared baking sheet and press it into a compact, even layer about 1 cm thick.

  5. Step 5

    Bake at 160°C until the surface is dry and the edges are golden brown.

    Timer: 25 min (fixed)

  6. Step 6

    Set the baking sheet on a heat-safe surface and leave the baked mixture undisturbed until completely cool and crisp.

    Timer: 30 min (fixed)

  7. Step 7

    Break the cooled slab into bite-size clusters.
