Pesto Stuffed Chicken Breast

Boneless chicken breasts filled with basil pesto and mozzarella, seared until golden, then baked until juicy and fully cooked.

Instructions

  1. Step 1

    Preheat the oven to 200°C.

  2. Step 2

    Combine the basil pesto and mozzarella in a mixing bowl.

    Ingredients used: 120.0 gr Basil Pesto, 100.0 gr Mozzarella

  3. Step 3

    Cut a deep pocket into the thick side of each chicken breast without slicing all the way through.

    Ingredients used: 4.0 piece Chicken Breast

    Cookware: Chef Knife, cutting board

  4. Step 4

    Season the chicken inside and out with the salt and black pepper. Divide the prepared pesto mixture evenly among the pockets and press the openings closed.

    Ingredients used: 2.0 gr Black Pepper, 4.0 gr Salt

  5. Step 5

    Heat the olive oil in an ovenproof skillet over medium heat. Add the stuffed chicken and sear the first side until golden.

    Timer: 3 min (fixed)

    Ingredients used: 15.0 ml Olive Oil

  6. Step 6

    Turn the chicken and sear the second side.

    Timer: 2 min (fixed)

  7. Step 7

    Transfer the skillet to the oven and bake for 15–20 minutes, until the thickest part of each chicken breast reaches 74°C.

    Timer: 18 min (fixed)

  8. Step 8

    Remove the chicken from the oven and rest it before serving.

    Timer: 5 min (fixed)
