Baked Halibut with Tomato Basil

Tender halibut fillets baked with a fresh topping of ripe tomatoes, basil, garlic, lemon, and olive oil.

Instructions

  1. Step 1

    Preheat the oven to 200°C. Use 1 tbsp (15 ml) olive oil to coat the baking dish and the halibut, then arrange the fillets in a single layer.

    Season the halibut evenly with ½ tsp (3 gr) salt and 1 gr ground black pepper.

    Dice the tomatoes, mince the garlic, and chop the basil, keeping the basil in two equal portions.

    Combine the tomatoes, garlic, lemon juice, remaining 1 tbsp (15 ml) olive oil, 10 gr basil, remaining ½ tsp (3 gr) salt, and remaining 1 gr ground black pepper.

  5. Step 5

    Spoon the tomato mixture over and around the halibut. Bake for 12–16 minutes, until the thickest part of each fillet reaches 63°C and flakes easily.

    Scatter the remaining 10 gr basil over the baked halibut and serve promptly.
