Pasta Primavera

Al dente pasta tossed with colorful spring vegetables, garlic, lemon, Parmesan, basil, and a light olive oil sauce.

Instructions

  1. Step 1

    Combine the water and 1 ½ tsp (10 gr) salt in a large pot and bring to a boil over high heat.

  2. Step 2

    Add the pasta and boil until al dente. Reserve 120 ml of the cooking water, then drain the pasta.

  3. Step 3

    Heat the olive oil in a large skillet over medium heat.

    Add the broccoli, bell pepper, zucchini, and remaining ⅝ tsp (4 gr) salt. Cook, stirring occasionally, until crisp-tender.

  5. Step 5

    Add the garlic and cook over medium heat until fragrant.

    Add the tomatoes and peas. Cook until the tomatoes soften slightly and the peas are hot.

  7. Step 7

    Add the drained pasta, reserved cooking water, and lemon juice. Toss over medium heat until a light sauce coats the pasta.

    Remove the skillet from the heat. Add the Parmesan, basil, and black pepper, then toss until evenly combined.
