Pasta Primavera with Garlic
Al dente pasta tossed with colorful spring vegetables, fresh garlic, lemon, Parmesan, and a light buttery olive oil sauce.
Instructions

Step 1
Bring a large pot of water to a boil over high heat.

Add 1 ¼ tsp (8 gr) of the salt and the pasta. Cook until al dente, stirring occasionally.

Reserve ¾ cup (180 ml) of the pasta cooking water, then drain the pasta.

Heat 2 tbsp (30 ml) of the olive oil in a large skillet over medium heat. Add the broccoli, asparagus, bell pepper, and remaining ⅝ tsp (4 gr) salt; cook, stirring occasionally, until beginning to soften.

Add the zucchini and green peas. Cook until the zucchini is just tender.

Move the vegetables to the sides of the skillet. Add the remaining 1 tbsp (15 ml) olive oil and the garlic to the center, then stir until fragrant.

Add the cherry tomatoes and cook until they soften slightly while retaining their shape.

Add the butter, lemon juice, black pepper, and reserved pasta cooking water. Stir over medium heat until the butter melts and the liquid begins to thicken.

Add the drained pasta and 40 gr of the Parmesan cheese. Toss over medium heat until the sauce lightly coats the pasta.

Remove the skillet from the heat. Fold in the basil and remaining 20 gr Parmesan cheese, then serve immediately.
