Pan-Fried Tilapia with Mango Salsa

Lightly seasoned, flour-dusted tilapia pan-fried until crisp and served with a fresh mango, lime, and jalapeño salsa.

Instructions

    Combine the mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and ⅜ tsp (2 gr) salt in the mixing bowl.

    Let the salsa stand while preparing the fish.

    Season both sides of the tilapia with the remaining ⅝ tsp (4 gr) salt, black pepper, and paprika.

    Place the flour in a shallow dish. Lightly coat each seasoned fillet, then shake off loose flour.

    Heat the vegetable oil in the large skillet over medium heat until it shimmers.

  6. Step 6

    Fry the coated tilapia in batches for 3 to 4 minutes per side, turning once, until golden and the thickest part reaches 63°C.

    Divide the tilapia among four plates and spoon the mango salsa over or alongside each fillet.
