Grilled Salmon with Mango Salsa
Grilled salmon fillets topped with a fresh mango, lime, pepper, and cilantro salsa.
Instructions

Step 1
Preheat the grill to medium heat.

Rinse and dry the mango, bell pepper, jalapeño, and cilantro. Prepare the mango, onion, peppers, and cilantro as specified.

Transfer the prepared produce to a mixing bowl. Fold in the lime juice, 1 tbsp (15 ml) olive oil, and ⅜ tsp (2 gr) salt, then set the salsa aside.

Pat the salmon dry on a rimmed baking sheet. Brush it with the remaining 1 tbsp (15 ml) olive oil and season with the remaining ⅝ tsp (4 gr) salt and all the black pepper.

Place the salmon skin-side down on the grill, close the lid, and cook until the skin releases easily from the grate.

Turn the salmon and cook until the thickest part reaches 63°C. Transfer it to a clean serving platter.

Step 7
Rest the salmon briefly, then serve each fillet topped with mango salsa.
