Turkish-style eggs gently cooked with softened green peppers, juicy tomatoes, olive oil, and mild red pepper flakes.

Instructions

  1. Step 1

    Stem and chop the green peppers. Core and dice the tomatoes.

    Crack the eggs into a mixing bowl and whisk just until combined.

  3. Step 3

    Heat the olive oil in a large frying pan over medium heat. Add the chopped peppers and cook until softened but not browned.

  4. Step 4

    Add the diced tomatoes, salt, red pepper flakes, and black pepper. Cook over medium heat, stirring occasionally, until the tomatoes collapse and the excess liquid reduces.

  5. Step 5

    Reduce to low heat and pour in the beaten eggs. Fold gently through the vegetables until softly set and the eggs reach 71°C, then remove the pan from the heat.
