Lentil Soup with Spinach

A hearty soup of tender brown or green lentils, tomatoes, aromatic vegetables, cumin, and fresh spinach, finished with lemon.

Instructions

  1. Step 1

    Rinse the lentils thoroughly under cool running water and drain.

    Ingredients used: 300.0 gr Lentil

    Cookware: fine mesh strainer

  2. Step 2

    Heat the olive oil in the stockpot over medium heat. Add the onion, carrot, and celery and cook, stirring occasionally, until softened.

    Timer: 8 min (fixed)

    Ingredients used: 2.0 piece Carrot, 2.0 piece Celery, 30.0 ml Olive Oil, 1.0 piece Onion

  3. Step 3

    Add the garlic and cumin and stir until fragrant.

  4. Step 4

    Stir in the rinsed lentils, tomato, vegetable broth, and bay leaves.

  5. Step 5

    Increase to high heat and bring the soup to a boil.

    Reduce to low heat, partially cover, and simmer until the lentils are tender.

    Stir in the spinach and continue cooking over low heat until wilted and tender.
