Baked Eggplant with Tomato and Basil
Tender roasted eggplant layered with a simple fresh tomato, garlic, and basil sauce, then baked until bubbling.
Instructions

Step 1
Heat the oven to 220°C and line a rimmed baking sheet with parchment paper.

Toss the eggplant with 2 tbsp (30 ml) olive oil, ¾ tsp (5 gr) salt, and ⅜ tsp (1 gr) black pepper. Arrange the slices in a single layer on the prepared sheet.

Roast the eggplant for 15 minutes, turn the slices, and roast until tender and lightly browned.

Meanwhile, heat 1 tbsp (15 ml) olive oil in a large skillet over medium heat. Add the onion and cook until softened.

Add the garlic and dried oregano, then stir until fragrant.

Add the tomatoes, ½ tsp (3 gr) salt, and ⅜ tsp (1 gr) black pepper. Simmer over medium heat until the tomatoes soften and the sauce thickens slightly.

Remove the skillet from the heat and stir 10 gr basil into the tomato sauce.

Reduce the oven temperature to 200°C and coat the baking dish with the remaining 1 tsp (5 ml) olive oil.

Arrange half of the roasted eggplant in the baking dish, spread over half of the tomato sauce, and repeat the layers.

Bake until the sauce bubbles around the edges and the eggplant is very tender.

Rest the dish for 5 minutes, then scatter the remaining 10 gr basil over the top and serve.
