Korean Sweet Red Bean Bun
Soft Korean-style enriched buns filled with sweet red bean paste and finished with black sesame seeds.
Instructions

Step 1
Line a baking sheet with parchment paper.

Combine the flour, sugar, yeast, and salt in a mixing bowl. Add the egg and ¾ cup (160 ml) of milk warmed to about 30°C, then mix until a rough dough forms.

Knead until the dough begins to smooth out. Work in the softened butter, then continue kneading until the dough is elastic and can stretch thinly without tearing easily.

Cover the bowl and let the dough rise in a warm place until approximately doubled in volume.

Gently press the air from the dough and divide it into 8 equal pieces. Shape each piece into a ball, cover, and let rest.

Divide the red bean paste into 8 equal portions. Flatten each dough ball into a round, enclose one portion of paste, and firmly pinch the seam closed.

Place the buns seam-side down on the prepared baking sheet and gently flatten them. Cover and let rise until visibly puffy.

Preheat the oven to 180°C.

Brush the risen buns with the remaining 1 tbsp (15 ml) of milk and sprinkle with the sesame seeds. Press a shallow indentation into the center of each bun.

Bake at 180°C until the buns are risen and evenly golden brown.

Transfer the buns to a wire rack and let them cool for at least 15 minutes before serving.
