Keto Egg McMuffin

A hot almond-flour breakfast sandwich filled with a sausage patty, fried egg, and melted cheddar cheese.

Instructions

  1. Step 1

    Divide the melted butter between 2 microwave-safe ramekins and turn them to coat. In a mixing bowl, whisk 2 eggs with the almond flour, baking powder, and 1 gr salt, then divide the batter evenly between the ramekins.

    Ingredients used: 48.0 gr Almond Flour, 4.0 gr Baking Powder, 28.0 gr Butter, 2.0 piece Egg, 1.0 gr Salt

  2. Step 2

    Microwave each ramekin separately on high until the muffin is risen and set, 60–90 seconds. Let the muffins stand for 1 minute, then loosen and remove them.

  3. Step 3

    Heat a skillet over medium heat. Cook the sausage patties for 4–6 minutes, turning once, until browned and 71°C at the center, then transfer them to a plate.

  4. Step 4

    Split each muffin horizontally. Place the halves cut-side down in the skillet and toast over medium heat until lightly browned.

  5. Step 5

    Remove the muffin halves and add the cooking oil to the skillet. Crack in the remaining 2 eggs, season with the remaining salt and the black pepper, and cook over medium heat until the whites are set.

  6. Step 6

    Place one cheddar slice on each egg, cover the skillet, and cook over low heat until the cheese melts.

  7. Step 7

    Place one sausage patty and one cheese-topped egg between each pair of toasted muffin halves. Serve immediately.
