Thin, crisp oven-baked kale leaves seasoned simply with olive oil and salt.

Wash the kale, remove the tough stems, and tear the leaves into bite-size pieces. Spin dry, then blot away any remaining moisture.

Place the kale in the bowl. Add the olive oil and salt, then massage gently until every leaf has a thin, even coating.

Spread the seasoned kale across the baking sheets in a single layer without overlapping.

Bake at 150°C for 10 minutes. Rotate the sheets, then bake until the leaves are dry and crisp, 5 to 10 minutes more.
