Grilled Swordfish with Lemon Caper Sauce

Grilled swordfish steaks served with a bright, buttery sauce of lemon, capers, garlic, and parsley.

Instructions

  1. Step 1

    Preheat the grill on high heat for about 10 minutes.

    Timer: 10 min (fixed)

  2. Step 2

    Pat the swordfish dry. Brush it with 2 tbsp (30 ml) olive oil, then season with the salt and black pepper.

    Ingredients used: 2.0 gr Black Pepper, 30.0 ml Olive Oil, 6.0 gr Salt, 680.0 gr Swordfish Steak

  3. Step 3

    Grill the swordfish for 4–5 minutes per side, turning once, until opaque and 63°C at the center. Transfer it to serving plates.

  4. Step 4

    Heat the remaining 1 tbsp (15 ml) olive oil in the saucepan over medium heat. Add the garlic and cook until fragrant, about 30 seconds.

  5. Step 5

    Add the capers and cook for 1 minute.

    Timer: 1 min (fixed)

  6. Step 6

    Reduce to low heat. Add the lemon juice, then whisk in the butter until melted and lightly emulsified.

    Timer: 2 min (fixed)

  7. Step 7

    Remove the sauce from the heat and stir in the parsley. Spoon it over the grilled swordfish and serve immediately.
