Baked Cod with Lemon and Capers
Tender oven-baked cod topped with a bright lemon, garlic, butter, and caper sauce.
Instructions

Step 1
Preheat the oven to 200°C. Coat the baking dish with 2 tsp (10 ml) olive oil.

Pat the cod dry, season it evenly with the salt and black pepper, and arrange the fillets in the prepared baking dish.

Melt the butter in a small saucepan over low heat, then remove the pan from the heat.

Stir the remaining 1 ¼ tbsp (20 ml) olive oil, garlic, capers, and juice from one lemon into the melted butter.

Pour the lemon-caper sauce over the cod and arrange the sliced lemon on top.

Bake until the cod is opaque, flakes easily, and reaches 63°C at its thickest point, about 12–15 minutes.

Scatter the parsley over the baked cod and serve with the sauce from the dish.
