Grilled Swordfish with Herb Butter

Meaty swordfish steaks grilled until just cooked through and finished with lemony garlic herb butter.

Instructions

  1. Step 1

    Mix the softened butter with the parsley, chives, garlic, lemon juice, and ⅜ tsp (2 gr) salt until evenly combined. Set the herb butter aside.

    Ingredients used: 84.0 gr Butter, 6.0 gr Chive, 15.0 gr Flat-Leaf Parsley, 4.0 gr Garlic, 30.0 ml Lemon Juice, 2.0 gr Salt

  2. Step 2

    Preheat the outdoor grill on high heat and clean the grate.

    Timer: 10 min (fixed)

  3. Step 3

    Pat the swordfish dry, coat it with the olive oil, and season both sides with the remaining ⅝ tsp (4 gr) salt and the black pepper.

    Ingredients used: 1.0 gr Ground Black Pepper, 15.0 ml Olive Oil, 4.0 gr Salt, 680.0 gr Swordfish Steak

  4. Step 4

    Place the swordfish on the grill and cook over high heat without moving it until well marked underneath.

    Timer: 4 min (fixed)

  5. Step 5

    Turn the steaks and continue grilling until the centers reach 63°C.

    Timer: 4 min (fixed)

  6. Step 6

    Transfer the swordfish to serving plates, rest briefly, and spoon the herb butter over the hot steaks.
