Greek Spinach Pie (Spanakopita)
A crisp, layered phyllo pie filled with spinach, feta, fresh herbs, onions, and egg.
Instructions

Step 1
Preheat the oven to 190°C.

Cook the spinach in the large skillet over medium heat until wilted. Transfer it to a colander, let it cool slightly, then squeeze out as much liquid as possible and place it in the mixing bowl.

Heat 2 tbsp (30 ml) of the olive oil in the skillet over medium heat. Cook the yellow onion and green onion until softened, then add them to the spinach.

Add the feta, eggs, dill, parsley, salt, black pepper, and nutmeg to the bowl. Stir until the filling is evenly combined.

Brush the baking dish with some of the remaining olive oil. Layer half of the phyllo in the dish, brushing each sheet lightly with oil and allowing the edges to overhang.

Spread the spinach filling evenly over the phyllo. Fold the overhanging edges inward.

Layer the remaining phyllo over the filling, brushing each sheet with the remaining olive oil. Tuck in the edges and score the top into 8 portions without cutting through the filling.

Bake at 190°C until deeply golden and the center reaches 74°C.

Rest the pie for 10 minutes, then cut along the scored lines and serve.
