Baked Chickpea Patties

Savory oven-baked chickpea patties with onion, parsley, lemon, and warm spices, crisp on the outside and tender within.

Instructions

  1. Step 1

    Heat the oven to 220°C. Line a baking sheet with parchment paper.

    Place the chickpeas in a large mixing bowl and mash until no whole chickpeas remain but some coarse texture is visible.

    Add the onion, garlic, parsley, breadcrumbs, eggs, lemon juice, cumin, coriander, salt, and black pepper. Mix until evenly combined.

  4. Step 4

    Let the mixture rest so the breadcrumbs absorb excess moisture.

  5. Step 5

    Divide the mixture into 8 equal portions and form each into a patty about 2 cm thick. Arrange them on the prepared baking sheet.

    Brush the patties on both sides with the olive oil.

    Bake until the undersides are firm and lightly browned.
