Chewy baked oat bars with almonds, seeds, cranberries, raisins, honey, and peanut butter.

Instructions

  1. Step 1

    Heat the oven to 175°C. Line the square baking pan with parchment paper.

    Spread the rolled oats, almonds, and pumpkin seeds on the rimmed baking sheet. Toast until fragrant and lightly golden, stirring once.

  3. Step 3

    Transfer the toasted mixture to the mixing bowl, then add the dried cranberries and raisins.

    Combine the honey, peanut butter, and butter in the saucepan. Cook over low heat, stirring until smooth and fluid.

    Remove the saucepan from the heat. Stir in the vanilla extract, cinnamon, and salt.

    Pour the warm binder over the oat mixture and fold until everything is evenly coated.

  7. Step 7

    Transfer the mixture to the lined pan and press it into a compact, even layer. Bake at 175°C until the edges are lightly browned.

    Cool in the pan for 15 minutes, then lift out the slab and cool completely before cutting it into 12 bars.
