Gluten-Free Banana Bread with Dark Chocolate and Nuts
A moist banana loaf made with gluten-free oat flour, apple juice concentrate, dark chocolate, and mixed nuts.

Step 1
Preheat the oven to 175°C without fan. Line a 20 × 10 cm loaf pan with parchment paper.

Crack the eggs into a mixing bowl and whisk until foamy and slightly increased in volume.

Mash the bananas thoroughly with a fork, add them to the beaten eggs, and whisk until combined.

Add the apple juice concentrate and yogurt, then whisk until the mixture is uniform.

Add the oat flour and baking powder. Fold with a spatula just until no dry flour remains.

Fold the dark chocolate and mixed nuts evenly into the batter.

Scrape the batter into the prepared pan and level the surface. Bake for 45–55 minutes, until the center is set and a toothpick inserted in the middle emerges without wet batter.

Cool the loaf in its pan.
