Cut the beef into evenly sized cubes and pat them thoroughly dry.

Place the beef in the bowl and season evenly with the salt and black pepper.

Heat the olive oil in the skillet over high heat until shimmering.

Sear the seasoned beef in two uncrowded batches, turning after the first side is deeply browned. Transfer each batch to the plate when the largest pieces reach 63°C internally.

Reduce to low heat. Add the butter and garlic to the skillet and cook just until fragrant.

Return the seared beef and its collected juices to the skillet. Add the parsley and toss until the bites are evenly coated and hot.

Remove the skillet from the heat and rest the steak bites before serving.
