Chewy chilled energy bars made with dates, toasted oats, almonds, raisins, chia seeds, peanut butter, and honey.

Instructions

  1. Step 1

    Heat the oven to 180°C. Line the square baking pan with parchment paper, leaving an overhang on two sides.

  2. Step 2

    Spread the oats and almonds on the baking sheet. Toast until fragrant and lightly golden, stirring once halfway through.

  3. Step 3

    Process the dates until they form a sticky, mostly smooth paste.

  4. Step 4

    Warm the peanut butter and honey in the saucepan over low heat, stirring until smooth and fluid.

  5. Step 5

    Remove the saucepan from the heat and stir in the vanilla extract and salt.

  6. Step 6

    Place the toasted oat mixture, date paste, raisins, and chia seeds in the mixing bowl. Add the warm peanut butter mixture and stir until evenly combined.

  7. Step 7

    Transfer the mixture to the lined pan and press it firmly into an even layer.

  8. Step 8

    Refrigerate until firm enough to slice cleanly.

  9. Step 9

    Lift the slab from the pan using the parchment, place it on a cutting board, and cut it into 12 bars.
