Egg and Bacon Cups

Individual baked eggs in crisp bacon-lined cups with cheddar and chives. Makes 6 cups, serving 3 people.

Instructions

  1. Step 1

    Preheat the oven to 190°C. Lightly grease 6 wells of the muffin tin.

    Ingredients used: 5.0 ml Vegetable Oil

    Cookware: muffin tin

  2. Step 2

    Cook the bacon in a skillet over medium heat until some fat renders but the strips remain flexible, 3 to 4 minutes. Transfer the strips from the skillet.

    Timer: 4 min (fixed)

    Ingredients used: 6.0 piece Bacon

    Cookware: skillet, tongs

  3. Step 3

    Curve one par-cooked bacon strip around the inside edge of each greased well. Divide the cheddar among the wells, crack one egg into each, then sprinkle with the chives, salt, and black pepper.

    Ingredients used: 1.0 gr Black Pepper, 60.0 gr Cheddar Cheese, 6.0 gr Chive, 6.0 piece Egg, 1.5 gr Salt

  4. Step 4

    Bake until the egg whites are fully set and the centers reach 71°C, 13 to 16 minutes.

    Timer: 15 min (fixed)

  5. Step 5

    Let the cups stand in the tin for 3 minutes, then loosen the edges and lift them out. Serve warm.
