Damson Plum Crumble Bars
Soft damson plum and chia filling layered between a pressed oat, almond, banana, and peanut butter crumble, then chilled for clean slices.

Step 1
Combine the damson plums, chia seeds, lemon juice, 30 ml apple juice concentrate, and water in the saucepan. Cook over medium heat for 8–10 minutes, stirring regularly, until the plums soften and the liquid thickens slightly.

Heat the oven to 170°C. Line the loaf pan with baking paper, leaving enough overhang to lift out the baked crumble.

Mash the banana in the mixing bowl until mostly smooth.

Mix the peanut butter, 60 ml apple juice concentrate, and vanilla extract into the banana until evenly combined.

Fold in the rolled oats, almond flour, and salt until a cohesive, slightly sticky crumble forms.

Press about two-thirds of the crumble mixture firmly and evenly across the bottom of the lined loaf pan.

Spread all of the cooked plum filling evenly over the pressed base.

Break the remaining crumble mixture into small clumps and scatter them evenly over the filling. Press very lightly so the topping remains craggy.

Bake on the middle oven rack for 30–35 minutes, until the top is lightly browned and the filling bubbles near the edges.

Set the pan on a wire rack and cool completely for about 1 hour.

Refrigerate the cooled crumble in the pan for 2 hours, then lift it out by the paper and cut it into 10 bars.
