Instructions

  1. Step 1

    Heat the olive oil in a Dutch oven over medium heat.

    Bring the curry to a boil over high heat. Reduce to low heat, partially cover, and simmer until the lentils and sweet potato are tender, stirring occasionally.

    Stir in the spinach and cook over low heat until wilted.
