Crispy Chicken Thighs with Lemon
Bone-in chicken thighs with deeply crisped skin, finished with a bright lemon, garlic, and thyme pan sauce.

Step 1
Preheat the oven to 220°C.

Finely zest the lemon into a small bowl, then squeeze its juice into the same bowl.

Pat the chicken thighs dry, then season them evenly with the salt and black pepper.

Heat the olive oil in the ovenproof skillet over medium heat. Place the seasoned thighs skin-side down and cook undisturbed until the skin is deep golden and releases easily, 8 to 10 minutes.

Turn the thighs skin-side up and transfer the skillet to the oven. Roast until the thickest part reaches at least 74°C, 15 to 20 minutes.

Transfer the cooked thighs to a clean plate and let them rest while making the sauce. Carefully pour off excess rendered fat, leaving a thin coating in the skillet.

Set the skillet over medium heat. Add the garlic and thyme and cook until fragrant, about 30 seconds.

Add the chicken stock and the prepared lemon zest and juice. Scrape up the browned bits and simmer until the sauce reduces slightly, about 3 minutes.

Reduce to low heat and whisk in the butter until the sauce is glossy. Spoon the sauce around the chicken, keeping the crisp skin mostly uncovered, and serve.
