Cornmeal Muffins

Tender, lightly sweet American cornmeal muffins with crisp golden edges and a soft crumb.

Instructions

  1. Step 1

    Preheat the oven to 200°C. Line a 12-cup muffin pan with paper liners.

  2. Step 2

    Whisk the cornmeal, flour, sugar, baking powder, and salt together in a large mixing bowl.

    Ingredients used: 125.0 gr All-Purpose Flour, 10.0 gr Baking Powder, 150.0 gr Cornmeal, 3.0 gr Fine Salt, 50.0 gr Granulated Sugar

  3. Step 3

    Whisk the milk, eggs, and melted butter together in a medium mixing bowl until evenly blended.

  4. Step 4

    Pour the wet mixture into the dry mixture and fold just until no dry pockets remain.

  5. Step 5

    Divide the batter evenly among the 12 lined muffin cups.

  6. Step 6

    Bake at 200°C until the tops are golden and a toothpick inserted in the center comes out clean, 16–20 minutes.

    Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack.
