Crisp, golden fritters filled with sweet corn and scallions, with a tender, lightly seasoned center.

Instructions

  1. Step 1

    Whisk the flour, baking powder, salt, and black pepper together in a large mixing bowl.

    Whisk the eggs and milk together in a medium bowl until uniform.

    Pour the egg mixture into the dry ingredients, then add the corn and scallions. Fold just until no dry flour remains.

    Let the batter rest for 5 minutes.
