Coconut Lime Bars
Buttery shortbread bars topped with a bright lime-and-coconut filling, baked until set and chilled before slicing.
Instructions

Step 1
Heat the oven to 175°C. Line the baking pan with parchment paper, leaving an overhang on two sides.

Combine 1 ½ cup (180 gr) of the all-purpose flour with the powdered sugar and salt in a mixing bowl.

Stir in the melted butter until a crumbly dough forms. Press the dough firmly and evenly into the lined pan.

Bake the crust until the edges are lightly golden, about 18 minutes. Keep the oven at 175°C.

Whisk the granulated sugar with the remaining 4 tbsp (30 gr) of all-purpose flour in a clean mixing bowl.

Whisk the eggs into the sugar mixture until smooth, then whisk in the lime juice and lime zest.

Fold the shredded coconut into the lime filling, then pour the filling over the hot crust.

Bake at 175°C until the edges are firm, the center is just set, and the filling reaches at least 71°C, about 22 to 25 minutes.

Set the pan on a wire rack and let the bars cool for 1 hour.

Cover and refrigerate the bars until firm, at least 2 hours.

Use the parchment overhang to lift out the slab, then cut it into 16 bars.
