Tender, lightly crisp cookies made with almond flour, butter, and vanilla.

Instructions

  1. Step 1

    Preheat the oven to 175°C. Line a baking sheet with parchment paper.

    Whisk the almond flour, baking soda, and salt together in a mixing bowl.

    In a second mixing bowl, beat the butter and granulated sugar until evenly combined and slightly fluffy.

    Beat in the egg and vanilla extract until smooth.

    Fold the dry mixture into the butter mixture until a soft, uniform dough forms.

    Cover and refrigerate the dough until firm enough to portion.

    Divide the dough into 12 equal portions, roll them into balls, and arrange them on the prepared baking sheet. Flatten each ball to about 1 cm thick.
