Soft, tender cookies made with absorbent coconut flour, brown sugar, butter, and semisweet chocolate chips.

Instructions

  1. Step 1

    Preheat the oven to 175°C. Line a baking sheet with parchment paper.

    Melt the butter in a small saucepan over low heat, then remove it from the heat and let it cool slightly.

    Whisk the coconut flour, baking soda, and salt together in a mixing bowl.

    In a second mixing bowl, whisk the melted butter and brown sugar until smooth. Whisk in the eggs and vanilla extract.

    Stir the dry mixture into the wet mixture until evenly combined. Let the dough rest to thicken.

    Fold the chocolate chips evenly into the thickened dough.

    Divide the dough into 12 equal portions on the prepared baking sheet. Gently flatten each portion into a disc about 1.5 cm thick.

    Bake at 175°C until the edges are lightly browned and the centers look set.
