Cocoa Tahini Date Cookies
Soft, flourless cocoa cookies sweetened with dates and enriched with tahini. The cookies firm as they cool and yield about six small cookies.
Instructions

Step 1
Heat the oven to 180°C and line a baking sheet with parchment paper.

Place the dates in a heatproof bowl, cover with the hot water, and soak for 10 minutes. Drain thoroughly, then mash the softened dates with a fork until mostly smooth.

Whisk the egg and tahini in a mixing bowl until smooth and uniform.

Stir the mashed dates, cocoa powder, and baking powder into the tahini mixture until no dry patches remain.

Spoon the mixture onto the prepared baking sheet in six evenly spaced mounds and gently flatten each mound into a thick round.

Bake at 180°C for 10 minutes, until the edges are set and the centers no longer look wet.

Cool the cookies on the baking sheet for 10 minutes before serving.
