Classic Baked Cheesecake
A creamy American-style baked cheesecake with a crisp graham cracker crust and a lightly tangy vanilla filling.

Step 1
Preheat the oven to 175°C.

Combine the graham cracker crumbs, melted butter, and 3 ¼ tbsp (40 gr) granulated sugar. Press the mixture firmly and evenly over the base of the springform pan.

Bake the crust until fragrant and lightly browned at the edges. Place it on a wire rack and reduce the oven temperature to 160°C.

Beat the cream cheese on low speed until smooth. Add the remaining 1 cup (210 gr) granulated sugar, flour, and salt, then mix just until uniform.

Mix in the sour cream, vanilla extract, and lemon juice on low speed until combined.

Add the eggs one at a time, mixing on low speed after each addition just until incorporated.

Pour the filling over the crust and smooth the top. Bake at 160°C until the edges are set, the center still has a slight wobble, and the center reaches 71°C.

Turn off the oven, leave the cheesecake inside, and open the oven door slightly so it cools gradually.

Transfer the cheesecake to a wire rack and let it cool at room temperature.

Refrigerate the cheesecake in its pan until thoroughly cold and firm.

Release the chilled cheesecake from the springform pan and cut it into 12 slices.
