Cilantro Lime Cauliflower Rice

Finely chopped cauliflower sautéed until tender, then brightened with fresh lime juice and cilantro.

Instructions

  1. Step 1

    Working in batches, pulse the cauliflower florets in a food processor until they resemble grains of rice. Avoid processing them into a paste.

  2. Step 2

    Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant without browning.

    Timer: 1 min (fixed)

  3. Step 3

    Add the prepared cauliflower, salt, and black pepper. Cook over medium heat, stirring occasionally, until tender but not mushy.

  4. Step 4

    Chop the cilantro leaves and tender stems.

    Remove the skillet from the heat. Stir in the lime juice and prepared cilantro, then serve warm.
