Chocolate Mint Layer Cake
A moist two-layer chocolate cake filled and covered with peppermint buttercream, then finished with dark chocolate ganache.
Instructions

Step 1
Preheat the oven to 175°C. Line the bases of two 20 cm round cake pans with parchment paper.

Whisk the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt together in a mixing bowl.

In a second bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until smooth.

Add the wet mixture to the dry mixture and whisk just until no dry pockets remain.

Gradually whisk the hot water into the batter until evenly blended. The batter will be thin.

Divide the batter evenly between the prepared pans. Bake until a toothpick inserted in the centers comes out with a few moist crumbs, 28–32 minutes.

Cool the cakes in their pans for 10 minutes, then turn them onto a wire rack and cool completely.

Beat the softened butter with an electric mixer until pale and creamy, about 3 minutes.

Add the powdered sugar gradually, then add the peppermint extract. Beat until the buttercream is light and smooth, about 3 minutes.

Place one cooled cake layer on a serving plate, spread it with about one-third of the buttercream, and add the second layer. Cover the top and sides with the remaining buttercream.

Heat the heavy cream in a small saucepan over medium heat until steaming, then remove it from the heat before it boils.

Pour the hot cream over the chopped dark chocolate. Let it stand for 3 minutes, then whisk until smooth and glossy.

Let the ganache cool until slightly thickened, then spread it over the top of the cake and allow it to drip down the sides.
