Chocolate Avocado Brownies
Fudgy chocolate brownies made with ripe avocado, melted dark chocolate, and cocoa powder.
Instructions

Step 1
Preheat the oven to 180°C. Line the baking pan with parchment paper, leaving an overhang on two sides.

Set the heatproof bowl over a saucepan of barely simmering water on low heat. Add the dark chocolate and butter, stirring until smooth, then remove the bowl from the pan.

Process the avocado until completely smooth. Add the eggs, sugar, and vanilla extract, then process just until evenly blended.

Whisk the cocoa powder, flour, baking powder, and salt together in a mixing bowl.

Stir the melted chocolate mixture into the avocado mixture. Add the dry mixture and fold just until no dry streaks remain.

Spread the batter evenly in the prepared pan. Bake at 180°C for 25–30 minutes, until the edges are set and a skewer inserted near the center emerges with moist crumbs.

Place the pan on a wire rack and let the brownies cool completely before lifting them out by the parchment overhang.

Transfer the cooled slab to a cutting board and cut it into 16 squares.
