Chickpea Salad Sandwich

A creamy, textured chickpea salad with crisp celery, red onion, parsley, and lemon, served on whole-wheat bread with lettuce.

Instructions

  1. Step 1

    Drain the chickpeas in a colander, rinse them under cool running water, and shake off as much water as possible.

    Transfer the drained chickpeas to a mixing bowl and mash them coarsely with a fork, leaving some chickpeas partly intact.

  3. Step 3

    Finely chop the celery, red onion, and parsley on a cutting board.

    Ingredients used: 60.0 gr Celery, 15.0 gr Flat-Leaf Parsley, 40.0 gr Red Onion

  4. Step 4

    Stir the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper into the mashed chickpeas until evenly combined.

    Ingredients used: 1.0 gr Black Pepper, 15.0 gr Dijon Mustard, 15.0 ml Lemon Juice, 60.0 ml Mayonnaise, 3.0 gr Salt

  5. Step 5

    Fold the chopped vegetables and parsley into the chickpea mixture.

  6. Step 6

    Arrange the lettuce on four bread slices, divide the chickpea salad evenly over them, and close with the remaining bread slices. Cut the sandwiches if desired and serve promptly.
