Chicken Tikka Masala
Roasted yogurt-marinated chicken in a creamy, warmly spiced tomato sauce.

Step 1
Preheat the oven to 230°C.

Mix the chicken, yogurt, lemon juice, 2 ½ clove (8 gr) garlic, 8 gr ginger, 2 tsp (4 gr) garam masala, 2 gr cumin, ⅞ tsp (2 gr) paprika, turmeric, cayenne, 4 gr salt, black pepper, and oil. Marinate for 20 minutes.

Spread the marinated chicken on the baking sheet in a single layer. Roast until browned at the edges and the thickest pieces reach 74°C, 15–18 minutes.

Heat the remaining 1 tbsp (15 ml) oil and the butter in the skillet over medium heat. Add the onion and cook until soft and lightly golden, about 8 minutes.

Add the remaining 2 ½ clove (8 gr) garlic, 7 gr ginger, 2 tsp (4 gr) garam masala, 2 gr cumin, and ⅞ tsp (2 gr) paprika. Stir over medium heat until fragrant, about 1 minute.

Stir in the tomatoes, sugar, and remaining salt. Bring to a gentle simmer, reduce to low heat, and cook for 12 minutes.

Stir in the cream and water. Simmer over low heat for 3 minutes until smooth and slightly thickened.

Add the roasted chicken and any juices from the baking sheet to the sauce. Simmer over low heat for 5 minutes, then stir in the cilantro and serve.
