Lamb Curry with Yogurt
A warmly spiced Indian-style curry of tender braised lamb in a tomato and yogurt sauce.

Step 1
Heat the vegetable oil in a heavy pot over medium heat.

Add the onion and cook over medium heat until soft and golden at the edges.

Stir in the garlic and ginger, then cook until fragrant.

Add the cumin, coriander, turmeric, and ground chili. Stir over low heat until aromatic.

Add the lamb and cook over medium heat, turning the pieces, until lightly browned.

Reduce to low heat. Add the yogurt gradually, stirring continuously until evenly incorporated.

Stir in the tomato, water, and salt. Bring the sauce to a gentle simmer over medium heat.

Cover and simmer over low heat until the lamb is fork-tender and reaches at least 74°C internally.

Uncover and simmer over medium heat until the sauce reaches a rich, spoon-coating consistency.

Remove from the heat. Stir in the garam masala and lemon juice, then scatter the cilantro over the curry before serving.
