Chicken and Broccoli Alfredo
Fettuccine tossed with tender chicken and broccoli in a creamy garlic-Parmesan Alfredo sauce.
Instructions
-
Step 1
Pat the chicken dry, cut it into bite-size pieces, and season it with salt and black pepper.
-
Step 2
Bring the water and salt to a boil in a large pot over high heat.
-
Step 3
Add the fettuccine and cook until it is about 3 minutes short of al dente, stirring occasionally.
-
Step 4
Add the broccoli to the pasta pot and cook until the pasta is al dente and the broccoli is crisp-tender. Drain well.
-
Step 5
Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken and cook, turning occasionally, until browned and 74°C at the center; transfer it to a clean plate.
-
Step 6
Melt the butter in the same skillet over medium heat. Add the garlic and cook just until fragrant.
-
Step 7
Pour in the heavy cream and bring it to a gentle simmer over medium heat.
-
Step 8
Reduce to low heat and simmer until the cream thickens slightly.
-
Step 9
Add the Parmesan cheese, salt, and black pepper. Whisk over low heat until the cheese has melted and the sauce is smooth.
-
Step 10
Add the drained fettuccine and broccoli and the cooked chicken to the sauce. Toss over low heat until evenly coated and hot, then serve immediately.
