Baked Chicken Parmesan
Oven-baked breaded chicken breasts topped with marinara sauce, melted mozzarella, and Parmesan cheese.
Instructions

Step 1
Heat the oven to 220°C. Set a wire rack over a baking sheet.

Place each chicken breast on a cutting board and pound it to an even thickness of about 1.5 cm.

Combine the flour, salt, and black pepper in a shallow dish.

Crack the eggs into a second shallow dish and whisk until uniform.

In a third shallow dish, combine the bread crumbs, 40 gr Parmesan, oregano, and olive oil. Toss until the crumbs are evenly moistened.

Coat each chicken breast in the seasoned flour, dip it in the egg, and press it into the bread crumb mixture. Arrange the coated chicken on the wire rack without overlapping.

Bake the chicken at 220°C until the coating is crisp and beginning to brown.

Spoon the marinara sauce over the chicken. Top with the mozzarella and the remaining 20 gr Parmesan.

Return the chicken to the oven and bake at 220°C until the cheese is melted and the center of each breast reaches 74°C.

Rest the chicken briefly before serving.
