Baked Chicken Parmesan
Breaded chicken breasts baked until crisp, topped with marinara sauce, mozzarella, and Parmesan, then baked until bubbling and golden.
Instructions

Step 1
Preheat the oven to 220°C and lightly prepare a baking sheet for the breaded chicken.

Place the chicken on a cutting board, pound it to an even thickness, and season both sides with the salt and black pepper.

Put the flour in one shallow bowl. Whisk the eggs in a second bowl, then combine the breadcrumbs with 40 gr of Parmesan in a third bowl.

Coat each seasoned chicken piece first in flour, then egg, and finally the breadcrumb mixture. Arrange the pieces on the baking sheet and drizzle evenly with the olive oil.

Bake the breaded chicken at 220°C until the underside begins to brown.

Turn the chicken and continue baking until the second side is lightly browned.

Spoon the marinara sauce over the chicken, then top with the mozzarella and the remaining 20 gr of Parmesan.

Return the chicken to the oven and bake at 220°C until the cheese is melted and the thickest part of each piece reaches 74°C.

Rest the baked chicken Parmesan briefly before serving.
