Chicken Alfredo with Broccoli
Fettuccine tossed with tender chicken and broccoli in a creamy garlic-Parmesan Alfredo sauce.
Instructions

Step 1
Bring the water to a boil in a large pot. Stir in 1 tsp (6 gr) of the salt.

Add the fettuccine and cook for 7 minutes, stirring occasionally. Add the broccoli and continue cooking for 3 minutes, until the pasta is al dente and the broccoli is tender-crisp.

Reserve 120 ml of the cooking water, then drain the pasta and broccoli.

Season the chicken with ⅜ tsp (2 gr) salt and ½ tsp (1 gr) ground black pepper. Heat the olive oil in a large skillet over medium heat, add the chicken, and cook until browned and the thickest pieces reach 74°C.

Transfer the cooked chicken to a clean plate and set it aside.

Reduce the skillet to low heat. Add the butter and garlic, then cook until fragrant without browning the garlic.

Pour in the heavy cream and bring it to a gentle simmer over medium heat, stirring frequently.

Return the skillet to low heat. Gradually whisk in the Parmesan, then stir in the remaining ⅜ tsp (2 gr) salt and ½ tsp (1 gr) ground black pepper. Add the reserved cooking water a little at a time until the sauce is smooth and lightly coats a spoon.

Add the drained fettuccine, broccoli, and cooked chicken to the sauce. Toss over low heat until evenly coated and hot, then serve immediately.
