Cheese-Stuffed Bell Peppers
Baked bell peppers filled with seasoned tomato rice, mozzarella, Parmesan, and fresh parsley.
Instructions

Preheat the oven to 200°C.

Combine the rice and vegetable broth in the saucepan. Bring to a boil over high heat, then cover and cook on low heat.

Remove the saucepan from the heat and let the rice stand, covered.

Arrange the pepper halves cut-side up in the baking dish. Cover with foil and bake until they begin to soften, then remove them from the oven.

Heat the olive oil in the skillet over medium heat. Add the onion and cook until softened.

Add the garlic and Italian seasoning and stir until fragrant.

Add the tomato, salt, and black pepper. Cook over medium heat until the mixture thickens slightly.

Remove the skillet from the heat. Fold in the cooked rice, parsley, Parmesan, and most of the mozzarella.

Fill the pepper halves with the rice mixture and top with the remaining mozzarella. Bake uncovered until the peppers are tender and the cheese is melted and lightly browned.
