Cheese Burek

A crisp, spiral-shaped Balkan pastry made with layers of phyllo and a savory feta and cottage cheese filling.

Instructions

  1. Step 1

    Preheat the oven to 190°C. Grease the round baking pan with a thin coating of sunflower oil.

    Ingredients used: 10.0 ml Sunflower Oil

  2. Step 2

    Combine the feta cheese, cottage cheese, eggs, and black pepper in a large mixing bowl until evenly blended.

    Ingredients used: 1.0 gr Black Pepper, 300.0 gr Cottage Cheese, 3.0 piece Egg, 400.0 gr Feta Cheese

  3. Step 3

    Whisk the sparkling water with the remaining sunflower oil in a measuring jug to make the phyllo wash.

    Ingredients used: 50.0 ml Sunflower Oil, 120.0 ml Water

  4. Step 4

    Lay out the phyllo sheets in pairs, brushing the sheets lightly with the wash. Place a narrow line of prepared cheese filling along one long edge of each pair, roll into loose logs, and arrange the logs in a spiral in the prepared pan; brush the top with any remaining wash.

  5. Step 5

    Bake at 190°C until deeply golden and crisp, 35 to 40 minutes. The center should reach at least 74°C.

  6. Step 6

    Let the burek rest for 10 minutes, then cut it into 8 portions and serve warm.
